Cheesy Tomato Soup with Pasta

This delicious cheesy tomato soup with pasta is simple to make, rich and full of flavor. This soup is super easy to make because its rich in nutritious and healthy meal that is so quick, ready in minutes, it doesn't require lot of chopping of veggies! Feel free to use your favorite pasta like Rotini, Bowtie, Penne or Shells. Enjoy this Quick meal recipe.


INGREDIENTS

  • 2 tbsp Olive oil
  • 1 cup Garden Tomato oat milk soup Or Tomato puree 
  • 1 cup Pasta, cooked according to package directions
  • Fresh Ginger-Garlic paste
  • 1 medium chopped Onion
  • 1 cup chopped Green Capsicum 
  • 1 cup chopped tomato
  • 2 tbsp Tomato Ketchup
  • Fresh or Dried Basil
  • 1 tbsp Oregano, Dried 
  • 1 tbsp Red Chili flakes
  • Cheese
  • Few Fresh Coriander Leaves

INSTRUCTIONS 

Prepare tomato soup with pasta 

  1. Heat two tablespoon of Olive Oil over medium heat in a pan. Once the oil is hot add chopped onion, add  fresh ginger and Garlic paste right after saute the onions on medium heat,  and let cook until the raw aroma is gone. add chopped green chili saute for a minute.
  2. Add chopped green capsicum, corn, tomato and cook for 2-3 mins. Do not overcook the veggies. you can add any vegetables that you like.  
  3. Add the garden tomato oat milk soup by pacific foods or tomato puree. cook it for 4-5minutes, add the salt to taste and mix until everything is well combined and add in the drained boiled pasta or you can take raw pasta and cook it together. And Don't put too much pasta. Add 2 TBSP Tomato Ketchup that is optional. Add 1cup water and cook it for additional 3-4 minutes at a slow simmer allow the soup slightly thicken. Remove from heat.
  4. To Serve, add the soup in a bowl and top with shredded Cheese, Dried Basil, Dried Oregano, for the spice Crushed Black Pepper, Red Chili flakes and few fresh Coriander leaves. Enjoy Hot!
