Handvo - Oven Recipe

Gujarati Handvo 

Handvo is a savory rice and lentils cake originating from Gujarat, India. It is a part of the Gujarati cuisine. It is often made with a bottle gourd filling, also you can add many other vegetables. Handvo is a nutritious meal with a combination of mixed lentils, rice and Vegetable

High protein and fiber rich recipe that you will absolutely love, I'm all for shortcuts in the kitchen but  do not compromise on taste. I'm using store brought Uttam Handvo Instant mix. 

INGREDIENTS TO MAKE HANDVO

  • 1 small Bottle gourd
  • 1 cup Spinach
  • 2tbsp Ginger Garlic paste 
  • 2tbsp Sesame seeds 
  • 1 tbsp Red chili powder
  • 4tbsp Jaggery
  • 1 UTTAM Handvo Instant Mix

INGREDIENTS for TEMPERING

  • 1 tbsp Mustard seeds
  • 2tbsp Sesame seeds 
  • 1 tbsp Red Chili Powder
  • 2-3 Whole Dried Red chilies

Tempering

  1. Heat oil in a pan, add mustard seeds, when seeds splutter add sesame seeds and asafoetida (hing) 
  2. Add 1 tbsp garlic and green chilies paste, Saute it until the raw aroma is gone. Give a quick stir and turn off the flame. 
  3. Add 1/3 of the tempering to the batter and mix well
  4. Spread another 1/3 of the tempering in the baking dish.

Preperation

  1. Grate bottle gourd and chop spinach and keep aside.
  2. Preheat the oven to 360 and Grease a baking dish or a pan and keep aside.
  3. Make a Garlic - Green chilies  paste and add to the batter. Add Salt, chili powder and mix well. 
  4. Add grated and chopped vegetables into batter and mix well.

Baking

  1. when ready to bake, pour the batter in the baking dish, top it with remaining 1/3 of the tempering.
  2. Place the tray in preheated oven and Bake at 380F for 35-45 mins. Bake until tester inserted in the handvo comes out clean.
  3. Turn Off the oven, turn on the broil for 5 - 6 mins to brown the top of handvo and we love this crispy brown top.
  4. Remove from oven. Let it cool down completely before you cut into pieces. Wait at least 15-20 mins.
  5. Serve with tomato ketchup/ Green Chutney.
